Most waffles that we encounter are batter based, the kind you mix up at home and pour on a waffle iron. Liege waffles are a brioche style waffle made from a yeast-based dough. Then they are rolled in large chunks of pearl sugar and pressed on an iron until the dough is cooked and the sugar is caramelized and wonderful. Pretty tough to duplicate unless you have a fancy waffle iron as well. Ours came straight from France!

The proper pronunciation of Liege sounds like” lee-EHZH “ (like the g in Mirage)- Super tough to remember, so we don’t care how you pronounce it, many words in Louisiana are pronounced many different ways anyway!

We originally didn’t plan on making a gluten free waffle, but we started getting a lot of requests so we are experimenting with a few recipes and will be able to launch a version of our waffle that is gluten free. We will always recommend getting our standard waffle if at all possible, though- it’s the Gluten that makes it Good!

ALMOST everything is made from scratch. We make our waffles, Chantilly cream, coulis, and lemon curd from scratch. We are also committed to using as much local berries, eggs, milk, heavy cream, butter, tea and coffee as possible and only source the highest quality pistachio cream and nut butters. Oh, and speaking of eggs, we only use organic cage-free eggs-the one’s with the really orange yolk? That is how we get that nice warm golden color on our waffles.
